Today, I’d like to share my thoughts on how I choose the sake I carry in my store.
Selecting Sake as a Sake Shop Owner
There are countless varieties of sake, and Japan is filled with incredible breweries. However, it’s impossible to stock every single one. With limited space and a limited number of bottles, selecting which sake to offer customers is both a major mission and a significant responsibility for a sake shop.
A sake shop is essentially a “curated sake boutique.” As a shop owner, ensuring that I have delicious sake is a given. However, I have a unique approach to selecting the sake I carry.
The Most Important Factor: "Connections"
The most important criterion for me when choosing sake is “connections.” I don’t simply select sake because it’s popular or tastes good—I prioritize understanding its background and the passion of the people who make it. To do this, I visit breweries whenever possible, speak directly with the brewers, and experience their dedication firsthand.
It’s fascinating—when I feel a strong connection with a brewer and think, “I really want to sell this person’s sake,” it always turns out to be excellent. People who take meticulous care in brewing, who are sincere in their craft—these qualities naturally manifest in the taste of their sake.
Choosing Sake Based on the Brewer’s Character
Selecting sake based on the brewer’s character might be an unusual approach. But precisely because of this, I can offer remarkable yet lesser-known sake at my store.
Through sake, people can connect with one another. I aspire to create a space where that happens, and I will continue to carefully curate my selection with this belief in mind.
