"A Small Brewery in Gunma Prefecture Dedicated to Yamahai Kimoto Production"
Founded in 1863, Shimaoka Shuzō is located in Ota City, in the eastern part of Gunma Prefecture. The brewery uses abundant spring water from Mount Akagi and local sake rice, focusing on the traditional “Yamahai Kimoto” brewing method.
The Yamahai Kimoto technique utilizes the winter climate in Japan, the natural lactic acid bacteria that reside in the brewery, and the power of nature to nurture the yeast starter through an age-old process. Under the leadership of the sixth-generation president, Toshinobu Shimaoka, the brewery is committed to meticulous craftsmanship, dedicating time and effort to uphold the traditional flavors and maintain the distinct “Shimaoka Sake” taste that has been cherished through the years.
