A Sake Brewery Passed Down Through Generations Since the Late Edo Period
Yamano Shuzo Co., Ltd. is a small brewery located in Katano City, Osaka Prefecture, producing 500 koku of sake annually. Utilizing techniques passed down through generations since the late Edo period, they brew sake using rice and water. The brewery uses high-quality spring water flowing from the Ikoma Mountain foothills, and approximately 80% of their total production consists of specific designated sake, with 40% being "genshu" (undiluted sake), showcasing their commitment to crafting exceptional sake every day.
