Just north of the brewery lies the Kumano River, and in the bitter cold of winter, icy northern winds sweep across the water surface. Drawing on pristine underground water sourced from sacred Mt. Okukumano, this sake is brewed by hand using time-honored methods. The result is a well-balanced masterpiece with a rich aroma and a harmonious blend of umami within a clean, crisp profile. Tasting note by the shop owner:
A soft, smooth mouthfeel, with umami rising in the finish, yet ending clean. Perfect as a meal-time sake.
At around 50°C (warm), the sweetness and acidity harmonize beautifully, enhancing the umami.

【The Southernmost Small Brewery on Honshu】
Located at the heart of the Kumano Sanzan World Heritage Site, this is the southernmost sake brewery on Japan’s main island, Honshu. It is the only local sake producer between Aridagawa Town in Wakayama and the Ise-Matsusaka region in Mie Prefecture. Blessed by the Kumano River—a sacred pilgrimage river and World Heritage Site—just to the north of the brewery, the environment provides pure underground spring water and harsh winter winds that flow over the river, enabling the preservation of traditional sake brewing methods.
"Local Sake Taiheiyo" expresses the spirit of the mighty Pacific Ocean—broad, pure, and grand. It embodies a sincere wish for people to enjoy this sake with an open and elevated spirit.
