"A Famous Dry Sake from Gifu Prefecture"

In the mid-Edo period, during the An’ei era, the original founder, Tetsuji Mizuno, opened a sake brewery in what is now Tajimi City, Gifu Prefecture. The popular sake “Michisakari” has long been beloved for its dry profile. Until the mid-Meiji period, it was enjoyed under the brand names “Kin Maruo,” “Gin Maruo,” and “Sumi Maruo.” Later, it changed to “Kogane,” and in the early Showa period, only the premium sake was branded as “Michisakari,” marking the birth of today’s Michisakari.

Following the vision of the former owner, Takakichi Mizuno, who laid the foundation for Michisakari’s signature dry profile, the current president, Tetsuji Mizuno, and a dedicated team of about 20 employees strive daily for excellence. The brewery operates for nine months each year, excluding July to September, producing approximately 2,000 koku (360,000 liters) annually.

While preserving traditional, experiential brewing methods, the team continuously works to achieve even higher quality and consistency in their sake.
