Yamano Shuzō – Osaka Prefecture

A brewery with traditions passed down since the late Edo period

Yamano Shuzō Co., Ltd. is a small brewery located in Katano City, Osaka Prefecture, with an annual production of about 500 koku. Sake is brewed here using time-honored techniques passed down from generation to generation since the late Edo period, using only rice and water.

They use renowned spring water that flows from the foot of Mt. Ikoma into the Amanogawa (Milky Way) River. About 80% of their total production consists of Tokutei Meishō-shu (premium category sake), and remarkably, around 40% of that is shipped as genshu—undiluted sake. Their strong dedication to genshu is a hallmark of their brewing philosophy.
