Chilled, it goes down smoothly and keeps you reaching for the next sip; warmed, the dryness turns into deeper umami—an easy-going junmai that shows a different side with temperature.
A dry sake made for Japanese food, especially richer home-style dishes like simmered foods and nikujaga (meat-and-potato stew).
About Shiwa Shuzoten (Iwate Pref.)
Shiwa Shuzoten is a very small brewery in Shiwa Town, Shiwa District, Iwate Prefecture—known as the birthplace of the Nanbu Toji tradition.
Founded in December of Meiji 36 (1903), it began when the first-generation Kiheiji Hirota took over a well-regarded local sake brewery and continued brewing through the postwar era as “Hirota Shuzoten.”
In October of Reiwa 4 (2022), the company incorporated and changed its name to “Shiwa Shuzoten Co., Ltd.” to strengthen its business foundation.
Born as a sake meant to “bring joy to a wide range of people,” the brewery’s flagship brand Hiroki remains beloved and is still the face of the brewery today.
