The natural acidity derived from the Yamahai brewing method harmonizes with the refreshing and transparent taste unique to Maikaze.

    Shimaoka Sake Brewery, Gunma Prefecture

    A small brewery in Gunma Prefecture that specializes in kimoto-style yamahai sake brewing

    Founded in 1860, Shimaoka Sake Brewery, which has its brewery in Ota City in the eastern part of Gunma Prefecture, uses the abundant spring water from Mount Akagi and local sake rice to brew sake using a "kimoto-style yamahai" method.
    Kimoto-style brewing is a traditional method that has been used since ancient times to cultivate the starter yeast by skillfully utilizing the winter climate of Japan, the natural lactic acid bacteria that live in the brewery, and the power of nature. Currently, under the leadership of the sixth-generation brewer, President Toshinori Shimaoka, the brewery is committed to careful brewing that takes time and effort, and continues to protect the "Shimaoka Sake Brewery taste" without changing the traditional taste.
